
EGGS BENEDICT CASSEROLE

Today is National Eggs Benedict Day, so I thought I would share a family favorite. We don’t just make this during the holidays, it is a great (and EASY) make ahead dish to serve when company is coming!
1 (12-oz) package English muffins, cut into 1-inch pieces
2 (6-oz) packages Canadian bacon, cut into 1-inch pieces
6 large eggs
2 1/2 cups milk
1/2 tsp. dry mustard
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
Quick Hollandaise
Paprika
Chopped fresh chives
1. Combine muffin pieces and Canadian bacon in a lightly greased 11 x 7-inch baking dish.
2. Whisk eggs and next 4 ingredients in a medium bowl. Pour egg mixture over muffin mixture. Cover and chill 8 hours.
3. Preheat oven to 375 degrees. Bake casserole at 375 degrees for 30 minutes. Uncover and bake 25 more minutes or until golden brown and set. Let stand 10 minutes. Cut into 6 squares. Drizzle squares with Quick Hollandaise sauce; sprinkle with paprika and chives. Serve immediately.
QUICK HOLLANDAISE
3 pasteurized egg yolks*
1 Tbsp. fresh lemon juice
1/4 tsp. salt
Dash of ground red pepper
3/4 cup butter
1. Process first 4 ingredients and 2 Tbsp. water in a blender until smooth.
2. Cook butter in a small saucepan over medium-high heat until melted and bubbly. (Do not brown.) Turn blender on high (with blender lid on and center cap open), immediately add hot butter in a slow steady stream, pouring through center cap opening. Process until thickened.
*Using pasteurized eggs for this recipe eliminates the need to heat them to 160 degrees for food safety.

BETTER BREAKFAST MONTH…CAN IT BE DONE?
September is Better Breakfast Month, so I have decided to give it a whirl. I don’t know if I will fix a “better” breakfast, but I will be sure to have some form of breakfast on the table for my family, every morning. Now, does it have to be a country breakfast consisting of eggs, bacon, homemade biscuits and fresh squeezed orange juice? Okay…even I have to admit that is a little much. Or, can it just be a very tasty, yet commuter friendly pop tart that I oh so lovingly took out of its silver pouch? I think a compromise is in order. Some days they might get the breakfast of kings (or princesses in my case), and some days they might get a more humble meal.
Whether this month is meant to help us all eat healthier in the mornings or just ensure that we eat the MOST IMPORTANT MEAL OF THE DAY, I will do my part to support the cause. I will post regularly so you will see my progress. After all, accountability is key!
Here is this mornings “nosh”.
KING RANCH CHICKEN CASSEROLE
from: Southern Living 40 Years of Our Best Recipes
2 Tbsp. butter or margarine
1 medium onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
3 cups chopped cooked chicken
1 (10 3/4-oz.) cream of chicken soup
1 (10 3/4-oz.) cream of mushroom soup
1 (10 oz.) can diced tomatoes and green chiles, undrained
1 tsp. chili powder
1 tsp. ground cumin
2 cups crushed tortilla chips
2 cups (8 oz.) shredded Cheddar cheese
Garnish: chopped fresh cilantro
1. Melt butter in a medium skillet over medium-high heat. Add chopped onion and bell peppers; saute 8 minutes or until tender.
2. Stir in chicken and next 5 ingredients; cook, stirring occasionally, 2 minutes.
3. Place 1 cup crushed tortilla chips in a 13 X 9 inch baking dish. Layer with half of chicken mixture and 1 cup shredded Cheddar cheese. Repeat layers, ending with cheese.
4. Bake, uncovered, at 325 degrees for 45 minutes or until mixture is thoroughly heated. Garnish, if desired.
Note: Freeze casserole up to 1 month, if desired. Thaw in refrigerator overnight, and bake as directed.
SEALING THE GROUT AND GRANITE!
After building my house 18 years ago and just completing the 3rd remodel, I now understand why contractors don’t bid on sealing the grout when they bid a job. I will just let the video speak for itself!
KATIE’S FAVORITE SONG ~ CAR WASH!!!
One of my FAVORITE songs is “Car Wash”. However, I think I have over played it. So…I had asked Delaney to make me a “mixed tape” of some of my favorite songs. They range from Patsy Cline, to Carrie Underwood, Michael Franti, to Christina Aguilara! So of course, I had to play Christina and Missy Elliott’s “Car Wash” for Katie (she hates this song, by the way). So here to perform “Car Wash”, Katie “Button” Schroeder!
TALKING JALEPENO!
Stopped at On the Border on the way home from Arlington, Texas, and Elle was hankerin’ for a jalepeno. Don’t try this at home!
HAPPY FATHER’S DAY!
Unfortunately, this Father’s Day, Cactus is in Argentina. Why is he in Argentina, you ask? Because he can’t wait 71 days to hunt dove here in the U.S. So…I have put together a little E-Card to send him from his girls. I hope you enjoy it. Make sure your volume is up!

TAYLOR’S GIFT
My dear friend Tara Storch and her husand Todd lost their beautiful daughter Taylor in a tragic skiing accident in March. I did not know her (or her other two siblings), but I am 100% sure that she was an incredible person both inside and out. Tara, Todd and their other two children Peyton and Ryan have started a foundation in Taylor’s honor promoting organ donation. When the Storch’s were told that Taylor would not survive, they made the unselfish decision to donate her organs. Five peoples lives have already been saved.
